The Real Minero Espadin Mezcal is a single-village mezcal made from 100% Espadin agave. It is produced in the village of San Baltazar Guelavila, Oaxaca, Mexico. The agave is cooked in an underground oven for three days, then crushed with a horse-drawn tahona. The mash is fermented in open-air wooden vats and double-distilled in copper stills.
