Alipus San Andres Mezcal is a traditional mezcal made from 100% Espadin agave. It is produced in the village of San Andres in Oaxaca, Mexico. The agave is cooked in an underground oven for three days and then crushed with a horse-drawn tahona. The mezcal is then double distilled in copper stills and bottled at 45% ABV. It has a smoky aroma with notes of cooked agave, citrus, and herbs. The flavor is smoky and earthy with a hint of sweetness. It has a smooth finish with a lingering smokiness.
